Is that a significant issue, when running discs on the front, and drums on the rear?
Yes. All VW's except for the very early models have dual circuit master cylinders. There is an outlet for the front brakes and an outlet for the rear. This is a safety backup - if one set goes out, the other set will cover.

You can easily space over the clutch and brake pedal if you feel it necessary.

I added an extra brake pedal return spring since the old one was shot and i didn't have another one in stock at the time. I also seem to remember I couldn't get the pedals apart.

I always use a roller pedal for the accelerator. I have just gotten use to them over the years and seem to put one on everything I drive.
Pardon my ignorance, how does a roller pedal work?

Same way as a stock pedal. You're just removing the paddle portion and putting a skate board wheel in it's place. The wheel rolls against your shoe bottom.

Simple enough. I have a 79 corvette with something similar. The corvette pedal is double hinged so as you press the gas the face of the pedal always moves with your sole of your shoe or foot

It depends a bit on how conservative you are.
The basic idea is great, as the pedal won't have to slide over the sole of your shoe, so no matter how the pedal is hinged, and where on your foot you place the pedal, it'll always move freely.
The bad news is that it takes some getting used to, if at all possible, depending how good you are with the change of feel.
